Information from the Statistics and Census Service (DSEC) indicated that number of operating restaurants, eating & drinking places and cooked-food stalls in municipal markets increased by 39 year-on-year to 2,345 in 2018. Total number of persons engaged went up by 3.2% to 33,737. Receipts and expenditure of the industry grew by 7.0% and 6.6% respectively to MOP 11.83 billion and MOP 11.57 billion. Gross Surplus surged by 28.1% to MOP 260 million while Gross Surplus Ratio inched up by 0.4 percentage points to 2.2%. Gross Value Added that measures the sectoral contribution to the economy amounted to MOP 4.31 billion, a rise of 7.9%; however, Gross Fixed Capital Formation dropped by 5.5% to MOP 302 million.
Number of restaurants and eating & drinking places increased by 33 year-on-year to 2,267, and number of persons engaged grew by 3.3% to 33,583. These establishments recorded MOP 11.78 billion in receipts and MOP 11.54 billion in expenditure, up by 7.0% and 6.6% respectively year-on-year. Analysed by type of establishment, receipts and expenditure of the 622 Chinese Restaurants (+7 establishments) expanded by 8.3% and 7.9% to MOP 5.18 billion and MOP 5.01 billion respectively, accounting for 44.0% and 43.4% of the respective total of restaurants, eating & drinking places. Local-style Cafes, Congee & Noodle Shops totalled 858 (+19 establishments). Their receipts increased by 2.3% to MOP 2.46 billion whereas expenditure rose by 3.4% to MOP 2.42 billion. Meanwhile, there were 210 Western Restaurants (+3 establishments); receipts of these restaurants grew by 3.1% to MOP 1.26 billion and their expenditure climbed by 2.6% to MOP 1.29 billion.
As regards expenditure, expenses on Purchase of Goods went up by 5.1% to MOP 4.26 billion and Compensation of Employees rose by 6.8% to MOP 4.04 billion. Moreover, Operating Expenses grew by 8.3% to MOP 3.24 billion, of which rents of establishment amounted to MOP 1.48 billion (45.6% of total), up by 12.0%; electricity charges also increased by 4.8% to MOP 395 million (12.2%).
Supported by the increases in the Gross Surplus of Chinese Restaurants (+17.0%) and Fast-food Restaurants (+26.1%), Gross Surplus of restaurants and eating & drinking places surged by 28.4% year-on-year to MOP 238 million in 2018. Gross Value Added stood at MOP 4.28 billion, up by 7.8%. On the other hand, Gross Fixed Capital Formation of the industry dropped by 5.5% to MOP 302 million ascribable to a decrease in the acquisition of machinery and equipment in 2018.
Number of cooked-food stalls operating in municipal markets increased by 6 year-on-year to 78 in 2018. There were 154 persons engaged, approximately the same number as in 2017. Receipts of the stalls went up by 9.6% to MOP 50.02 million and expenditure edged up by 0.1% to MOP 28.16 million. These stalls recorded MOP 21.86 million in Gross Surplus, a growth of 24.8%, and Gross Value Added expanded by 23.7% to MOP 23.41 million.
The Restaurants and Similar Establishments Survey covers licensed restaurants, eating & drinking places, and cooked-food stalls in municipal markets in 2018, but excludes restaurants and similar facilities directly run by hotels and gaming establishments, as well as street hawker stalls.
